Apple sauce is a delicious sauce which is excellent with pork or duck. If you double the quantities and leave out the pepper, you can chill it and serve as a wonderful dessert with a tablespoon of cream.

- Peel and core the apples and cut into cubes.
- Place the apple in a steel saucepan with the sugar and water. Cover and simmer over a low heat until the apply breaks down.
- Mash with a potato masher or the back of a spoon and add a good grind of pepper.
- Serve warm in a dish.

Tip: Never use an aluminium pot for preparing fruit. The acids in the fruit interact with the aluminium causing the fruit to turn green and have a bitter black taste.
