Spaghetti with tuna, capers and mint is a quick and easy dish to make which can be served as a main course or a starter. It is refreshingly light and full of flavours and aroma.
- Bring the pasta water to boil in a large pot and add the salt.
- Add the pasta to the pot and follow the instructions on the packet for the cooking time.
- Drain the liquid off the tuna and break it up a bowl. Mix together with the capers, mint, olive oil and a good grind of black pepper. When the pasta is cooked, drain it and toss it together with the sauce.
