A quick little traditional Italian appetiser which tastes deliciously refreshing and can be served on warm slices of toasted ciabatta.
- Cut the tomatoes in half, remove the seeds and dice the flesh coarsely. Finely chop the parsley and the garlic and juice the lemon.
- Mix the ingredients and season to taste with the lemon juice and freshly ground salt & pepper.
- Serve on warm toasted slices of ciabatta or baguette.
