crostini with tomatoes


A quick little traditional Italian appetiser which tastes deliciously refreshing and can be served on warm slices of toasted ciabatta.

2 teaspoons parsley chop finely
1 tablespoon olive oil extra virgin
4 tomatoes diced
1 lemon juiced
0.5 clove garlic chop finely
pepper freshly ground
ciabatta or baguette
  1. Cut the tomatoes in half, remove the seeds and dice the flesh coarsely. Finely chop the parsley and the garlic and juice the lemon.
  2. Mix the ingredients and season to taste with the lemon juice and freshly ground salt & pepper.
  3. Serve on warm toasted slices of ciabatta or baguette.
