crostini with mushrooms


A quick little traditional Italian appetiser which tastes deliciously of mushrooms and onions and can be served on warm slices of toasted ciabatta or baguette.

8 mushrooms halved
2 teaspoons parsley chopped finely
1 tablespoon olive oil extra virgin
1 small onions chopped finely
pepper freshly ground
  1. Fry the onion in a pan with the olive oil until soft. Remove the onion, increase the heat to high and fry the mushrooms until golden. Add the onion and parsley stir well and season with salt & freshly ground black pepper.
  2. Serve on warm toasted slices of ciabatta.
