the two minute mayonnaise

Mayonnaise is one of the easiest sauces to make and this method has the advantage that it is very fast, never splits and you can make very small quantities. It can be flavoured with almost anything and is the bases for other classic sauces such Aïoli, Andalouse, Dijonnaise, Rémoulade or Tartare. I guarantee that you will never dream of buying mayonnaise again once you have made your own.

ingredients:
1 egg
0.5 teaspoon salt
0.5 teaspoon pepper
0.5 teaspoon mustard
2 tablespoons white balsamico or lemon
400 ml olive oil or sunflower

method:
  1. Use a tall beaker which is just slightly wider than your hand blender. Add the ingredients in the order listed and pour the oil in gently so as not to disturb the other ingredients too much.
  2. Now take your hand blender and *before you turn it on*, lower it to the bottom of the beaker. Then turn it on and let it blend for about 10 seconds. After 10 seconds, slowly raise the blender until you reach the top. Your mayonnaise should be ready.
  3. *Important: Do not turn on the hand blender until you have reached the bottom of the beaker.
