Pea soup might not be as fashionably exotic as many of the soups served nowadays but it is still one of the kitchen classics which some of your younger friends may never have tried. It is simple and easy to make, if done correctly, has a gorgeous colour and with the addition of a bit of mint, is a refreshing little summer soup which can be served hot or cold.
ingredients:
850 ml
chicken stock or vegetable
700 g
frozen peas
2 tablespoon
cream
1 teaspoon
brown sugar
1 sprig
mint
pepper freshly ground
servings
method:
- Heat the stock in a pot.
- Add the peas, sprig of mint and the sugar. Season with salt & freshly ground pepper, bring to the boil and cook for 5 minutes until peas are tender.
- Pour into a liquidiser, blend and add the cream to taste.
- Serve hot or cold with a teaspoon of whipped cream and a mint leaf.
