Spaghetti with prawns and rocket is a lovely light Italian dish which is full of summer flavours and aroma. It is quick and easy to make and can be served as a main course or a starter.
ingredients:
500 g
spaghetti or capellini
50 g
salt for the pasta
5 litre
water for the pasta
400 g
frozen prawns
2 handfuls
rocket broken
2 cloves
garlic sliced finely
2 teaspoons
tomato paste
2 tablespoons
olive oil extra virgin
1 small glass
white wine
1
lemon zest and juice
pepper freshly ground

method:
- Bring the pasta water to boil in a large pot and add the salt.
- Add the pasta to the pot and follow the instructions on the packet for the cooking time.
- Heat a pan and add the olive oil. Fry the chillies and garlic until the garlic just begins to colour. Add the tomato paste and fry for 1 minute then add the shrimp and fry for 1 minute. Pour in the white wine, mix well and season with salt & freshly ground black pepper.
- When the pasta is cooked, drain it and add it to the sauce. Add half the rocket and the lemon juice and mix well. Serve immediately and garnish with the remaining rocket and lemon zest.
