method:
Heat the stock in a pot.
Add the peas, sprig of mint and the sugar. Season with salt & freshly ground pepper, bring to the boil and cook for 5 minutes until peas are tender.
Pour into a liquidiser, blend and add the cream to taste.
Serve hot or cold with a teaspoon of whipped cream and a mint leaf.
