This kitchen classic is the perfect side dish for any meat, fish or vegetarian meal. It is a wonderful combination of flavours and aromas and yet such a simple and delicious creation.
ingredients:
500 g
shallots peeled
60 g
white sugar
40 g
butter
2 tablespoons
white wine
2 tablespoons
white balsamico
salt freshly ground
pepper freshly ground

method:
- Pour the sugar in to a saucepan and allow to caramelise at medium temperature. Do not allow it to get too dark.
- Add the butter and stir until the caramel no longer sticks to the saucepan
- Add the shallots, white wine and balsamic and allow to simmer for 20 to 25 minutes.
- Salt and pepper to taste.
