method:
Cut the tomatoes in half, remove the seeds and dice the flesh coarsely. Finely chop the parsley and the garlic and juice the lemon.
Mix the ingredients and season to taste with the lemon juice and freshly ground salt & pepper.
Serve on warm toasted slices of ciabatta or baguette.
