A quick little traditional Italian appetiser which tastes deliciously of liver and apples and can be served on warm slices of toasted ciabatta or baguette.
- Fry the apple slices in a little olive oil until soft and golden brown. Remove the apple and gently fry the chicken liver for a couple of minutes on both sides. Remove from the pan, cut each liver into two flat pieces and season with salt & freshly ground black pepper.
- Serve together with the apple on warm toasted slices of ciabatta with a sprinkle of parsley or cress.
